I don't understand the mashed cauliflower thing. First of all, no one is fooled. They will not be mistaken for mashed potatoes, ever. Second, cauliflower is delicious. It is so sad to demolish it into a pile of tasteless, unappealing mush. Miso couldn't even save this stuff, but there's really no surprise here. VT is disappointing most of the time these days.

The chicken is really almost fantastic. Brown sugar and high heat give it lovely browned edges with tender thigh meat inside. In the end, it's just too spicy (which, when said in this house, means it is SPICY) and somehow a 4 serving recipe only made two largish servings, which bugs me.
